De Vie operates without ice, sources exclusively from independent French producers, and holds three-macaron Ecotable certification. All spirits and produce are sourced locally wherever possible, and menus are designed around what's available each season to minimise waste.

The venue consists of Comptoir De Vie, an intimate dining room helmed by Executive Chef Adam Purcell; Bar De Vie, located in the limestone cave beneath Comptoir De Vie, which showcases the team’s award-winning drinks and cocktail pedigree; and Cave De Vie, situated next to Comptoir De Vie, offering an array of French products available for retail purchase.
De Vie aims to set new standards for storytelling, environmentally conscious practices and productive innovation in the food and drinks sector, championing French spirits and produce. By pre-batching every drink at precise temperatures and sourcing exclusively from independent French growers and distillers, the team eliminates waste without compromise.
De Vie holds three-macaron recognition from Ecotable, France's leading sustainable restaurant certification.
Our producers include Une Ferme du Perche, Schaller Agrumes, Jardin Edulis, Baccae, Les Alchimistes and Bio Veba, among others. Every menu changes with the seasons, in some cases, daily.

In 2025, within the first three months of it’s opening, De Vie was awarded Time Out’s “Cocktail Bar Of The Year”.
In early 2026, De Vie was awarded 3 macarons by Ecotable, the highest award for a French restaurant in it’s effort for sustainability.
In April 2026 De Vie was shortlisted for the Tales Spirited Awards “Best New International Cocktail” 2026.
